Heliotropism -
Heliotropism is the name for when sunflowers track the sun's position in the sky. By default, the sunflower head points east towards the sunrise when it rises over the horizon each morning. As the day progresses, the motor cells in the sunflower stem tilts the flower bud so it receives the maximum amount of sunlight. By evening, the sunflower head points west toward the sunset. From horizon to horizon, the sunflower traces a 180 degree arc of the sun's position throughout the day.
Overnight, however, the sunflower will reset to its original eastward position and wait for the morning. It waits, ready to follow the sun's path once again.
Once fully bloomed, however, sunflowers no longer exhibit heliotropic behavior. The stems freezes into an eastward-facing position.
